How do you deal with new people you meet that just give one word answers or show that they don't wanna continue the conversation by their body language?
I usually ask questions to get the ball rolling and try to "word associate" to continue the conversation. It's worked with plenty of people but I've never encountered a situation like this when talking to someone new.
I usually drop the conversation if they dont even try to continue the conversation after 2-3 times of trying to get them to open up by either asking questions about them or trying to make small talk
Any thoughts? Am I doing anything wrong?

This is what you should do - they're saying they don't want to talk.

Back off, let them have their space, continue the conversation after a break looking for common ground.
Asking questions first is terrible: a lot of people don't like to divulge information to strangers. Talk about yourself first. It's harder but better.
Good plan, people have the right to not talk to you.

I generally tease them (up to but not quite to the point of insulting them). Be gently provocative, light-hearted. It helps if you make fun of yourself a little bit too, when you need to reassure them.
In other words, be daringly familiar, as if you had known them all your life.
