Usually I text the same way before and during a relationship but this leads to her getting mad at me for ignoring her or not caring enough. Spinning plates isn't an option for me, I live in a small town in Eastern Europe where having any type of relationship outside a monogamous one is considered cheating. How should I proceed?

I'm a hypocrite for saying this because this is an area I'm weak in but stay strong. Women will constantly try to change you and stop you from being the man she was first attracted to, then when you do buckle and give in to the nagging she'll become less attracted to you. Try to think logically and consider that she formed a relationship with you because you're you, it would be silly to change who you are and risk her not liking the new you.
Women don't know what they really want.

Don't text too often, sometimes a funny GIF or something helps. If you are texting, don't tell whole ass stories to her and try to set up dates in this vein. Also, just saying, you need to spin plates for the abundance or you risk ONEitis with your current girl.

If you want to spin plates and it is truly not possible to do that where you live (are you telling me no-one in your town has ever done that?), you will have to move to a bigger city.
If you were gay, and there were not enough potential partners in your town, that is what you would do. Sometimes small towns don't allow for certain lifestyles.
As for the texting, just ignore her if you want to. She is turning it into a power battle. You will either cave into her demands (bad idea) or she will accept that you are kind of guy who doesn't text much (she will either move on or desire you more, both of which are excellent outcomes for you).

We're talking here about a town with roughly 40.000 people. Everybody kinda knows eachother here so as soon as you're with someone the whole town knows it.
