You now ghost her eternally. She didn't reply to your question for nearly 2 weeks, and didn't respect you enough to tell you the bullshit she gave you until day 11. She's not really interested, man. She's just out of what she considers better options right now. Also, she's a single mother. You can do better.

11 days no contact,then when she exhausted all of her other options she came back to you. You could try,but there seems to be no attraction and she might flake yet again because you're not even on her top 3 guys she'd go out with. You'll do better with other chicks, don't put your eggs on that basket.
If you do try again try telling her you were too busy anyways,you almost forgot about it and don't ask her if she's available,just tell her to meet you at X spot at a certain time.
She's a single mom? I've had the experience that these girls could be interested but they play with time, sometimes you end up smashing at the 2nd date but it took 2 months.

Man up, young brother. You're putting her in a situation to where she has to lead the relationship.
You pick the time, you pick the place, and TELL her you're picking her up at this time, and you go pick her up.
If she likes you, she will rearrange her plans to accommodate you. If she legitimately can't she will ask to reschedule.
If she still says she can't, and doesn't reschedule, she's not interested. Move on.

I think she flaked because you forgot to ask her what you should wear and what to get for breakfast tomorrow. But I might be very wrong.
EDIT: But seriously, why are you guys so fucking scared of offering a time and place she won't be available? If she was truly interested, do you think she'll just say: "you chose the wrong time dude, better luck with the next girl" and ghost you?
Just take a decision and if it doesn't work for her she will offer an alternative like a normal person and if she doesn't, she wouldn't have accepted any other way anyway.
Instead, you guys ask a thousand probing questions, beat around the bush like scared little cats and delegate all the decision making to her because you are trying so hard to delay the moment she will reject you.
From now on, I want you to imagine every text you send to a girl costs you 5 bucks, or whatever amount you feel is a good deterrent. Are you going to ask her in 5 different way how her day was and what hour? of what day? of what weekend? she's available?

There are certain logistical issues as she lives a fair distance from me not as simple as "meet me at X bar" like you would say if you lived closer. I'm not scared of asking anything I'm focusing on logistics.
I could ask more details about exactly where in the city she is but that might violate your "too many questions rule"
Perhaps if she has genuine interest saying "when are you free" isn't such a big deal.
At no point did I ask her how her day was and I suggested 1 specific weekend only with no mention of what hour.
