I'm in a social circle chock full of people who a) never shut up or even end sentences, they only pause on 'and' to think of what's next, and b) constantly try to share interesting stories and personal info (really 'opening up', hippie style) so it feels rude to interject.
How can I deal with these people and politely bring up my own stuff, especially if my own interests are not at all related to theirs?

Be a good listener. While they talk you are learning about them. Knowledge will help you bed a gal.

If they don't say anything interesting, why do you waste your time with them?
If their talking brings something to your table, then shut up and listen.
For people who don't give pauses for others to talk your are just a spectator, so if the show isn't interesting there is no point watching it and you wouldn't interrupt someone's show would you?
But once you absorb their repertoire you can just drop them.
