The tldr is: buy a cheap Chinese voice recorder on amazon and just turn it on in the morning and charge it while you sleep. It'll keep a record of everything you say and hear that you can always access. The pain of digging through mostly useless recordings will get easier as AI improves and it becomes possible to simply ask your AI assistant to "play back my date with Stacey".
I don't have any fancy set up yet. Just copy over the mp3's to an encrypted hard drive every couple of days. But it's already become pretty useful. For example, I was able to analyze in detail a date I had a week ago and figure out where I misread interest from the girl. I was also able to save myself from the embarrassment of forgetting a girl's name that I'd picked up at the grocery store.
There may be some ethical concerns about recording people secretly. But the way I see it is, everyone is doing that to you already. The only difference is that they don't have easy access to the recordings they make (access is restricted to the NSA, CIA, and others..). So if people really cared, they wouldn't use smart phones or home assistants.

In reality, there is no need to sweat the legality of covertly recording someone while talking to them.
What are they going to do? Go to the police? The police will tell them to get lost.
So, what are they going to do? File a civil suite? What are the damages? None.
The reality is that you are going to have to show damages or actual harm before the police do anything. The police are totally overrun. I saw a documentary yesterday about Sweden (a high tax, high civil service country) and they are running at 1 in 4 murders being cleared up. They can't even deal with the murder case rate.
You think they are going to give you airtime if you come into a police station and say somebody recorded a conversation that we had together??

also, if you are in a public place, you can record away as much as you like, video, audio or stills. If a police officer tells you you can't, he's breaking the law.

at least in the USA, the legality of doing this is called "one party consent state", where at least one party (including you) have to consent to it (you can't for example intercept someone else's conversation over a wire or something) but as long as you are a party that consents you can do it.
Not sure what the legality of recording stuff purely for your own notes where you never share it with the light of day is, that might or might not be more nuanced
