There was a meet-up in office recently for a few days and this pretty chick kept showing a lot of interest in me then. Now, after exchanging numbers, when I started talking to her, she let it it slip that she has a boyfriend. Since then she is not very responsive to text messages or calls. Why do you think she's doing this? Is the initial attraction phase after the meetup in office over?

Classic shit-test. Don't respond. Wait for her to come to you. If she's interested, she'll text or call you. Remember, you have to pull her into your frame, not get pulled into hers.
If you want to ask her out, remember that she gets the honor of joining you in whatever it is you were planning on doing anyway, with or without her. If she wants to join you, cool. If not, cool. Just keep it moving.
